(this recipe is suitable for pesco-vegetarian)

Salmon teriyaki with pumpkin seed crust 

This dish is so easy to make, and so satisfying to eat. It's all about maximum flavour and convenience. You just need some key ingredients and you're ready to go.

Ingredients:

Large fresh piece of salmon (skinned and boned, and cut into fillets)
Jar of pre-made teriyaki sauce (available from all supermarkets in the speciality food isle)
Mushrooms (brushed clean and sliced thickly)
Pumpkin and sesame seeds
Fresh Egg Noodles (to serve alongside)

After washing and drying the salmon fillets, place to one side.

Brush clean and thickly slice the mushrooms. Place a generous layers of these at the bottom of a oven-proof dish.

Place the salmon fillets on the layer of sliced mushrooms.

Salmon fillets and mushrooms, covered in
teriyaki sauce and
topped with pumpkin and sesame seeds

Cover the salmon fillets with a generous amount of teriyaki sauce, also covering some of the mushrooms.

To make the seeded outer layer, sprinkle pumpkin and sesame seeds over the salmon, so that it forms a thick crust.

Bake in the oven at Gas Mark 7 for 15-20 minutes. Remove the salmon when just cooked (as it will continue to cook in the dish prior to serving).

Serve with the fresh egg noodles, and enjoy!
