Home-made hummus
(this dish is suitable for vegans)

Hummus served on wholemeal toast

I love hummus and eat it regularly. I often just buy it from ready-made on the way home from work. But I was interested in having a go at making my own, handmade version, and also learning and understanding what it is made from, and how it is made.

Relatively few ingredients are needed to make this dish and it requires no cooking at all.

Ingredients:

  2 tins of chickpeas - available at all good supermarkets and delicatessens
  Tahini paste - 100 ml (I purchased mine from Wally's Deli, Cardiff)
  Garlic cloves – 3, finely chopped and crushed
  Two teaspoons of fresh lemon juice
  Dash of water
  Cumin - to taste
  Salt to taste (I use Halon Môn)
  Olive oil (to drizzle over hummus when made)
  Toasted pine nuts (to decorate)

Drain the chickpeas (saving some for decoration at the end) and add to a mixing bowl/food processor. Add the lemon juice, tahini paste, water, cumin, salt and blend/combine until smooth.

Taste at this point, with regards the level of salt.

Also add further lemon juice and cumin if you feel it's needed.

Continue to blend until happy with the texture.

Once happy with the texture, put into a bowl and drizzle with olive oil. Scatter with the remaining chickpeas and pre-roasted pine nuts. Serve with pitta or on warm wholemeal toast.
