Pesto, pistachio and puff pastry tart
(this dish is suitable for lacto-vegetarians)

This recipe is simple to make, yet impressive when served. The toppings used here are down to personal and seasonal choice, but you can add other items, or exclude them, to suit your, and your guests', tastes.

Ingredients:

  1 pack of pre-rolled puff pastry (available from all major supermarkets)
  1 jar of pre-made pesto
  Pistachio nuts; removed from their shells
  Pine nuts
  On-the-vine tomatoes; sliced
  Sun-dried tomatoes; drained from oil
  1 fennel bulb; thinly sliced and pre-roasted
  Welsh goat's cheese, Welsh Cheddar or another cheese of your choice; sliced/grated

Pesto, pistachio and puff pastry tart


Take the pre-rolled puff pastry and lay it on a greased roasting tray.

Spread the jar of pesto sauce (red and green varieties are available; use either) along the puff pastry, but not to the edges. Leave approximately a half inch gap between the pesto sauce and the edge of the pastry to avoid the puff pastry sticking to the roasting tray due to the pesto sauce 'seeping' during cooking, and should also ensure that the pastry does not become soggy.

Then add the sliced and pre-roasted fennel, and the sliced on-the-vine tomatoes. Sprinkle the pine nuts and pistachio nuts evenly across the pastry.

At this stage you could add some herbs; tarragon or chives go well.

Finally, add the cheese (goat's cheese works very well with this dish) and place the puff pastry tart in the oven as per the instructions on the back of the packet.

Serve with dressed leaves and a lovely red wine.
